Mediterranean Bowl
This Mediterranean Bowl combines smoked paprika chicken with fresh vegetables, tomato salad, creamy hummus, and warm pita bread for a colorful and satisfying dinner.
Serve everything together in a large bowl or on a plate so everyone can create their own perfect combination of chicken, vegetables, hummus, and pita.
Ingredients
Chicken:
- 2.5 Pounds of Boneless, Skinless Chicken Breast
- 2 Tablespoons of Extra-Virgin Olive Oil
- 0.5 Teaspoon of Sea Salt
- 1 Tablespoon of Smoked Paprika
Sides:
- Pita Bread
- Hummus
- Carrots
- Bell Peppers
- Tomato Salad
Directions
- In a large bowl, add the olive oil, sea salt, and smoked paprika. Mix to combine.
- Remove the chicken from the packaging and place it on a cutting board. It is recommended to keep a separate cutting board that is used only for raw chicken.
- Slice the chicken breasts across the short side into slices about 0.5 centimeter thick.
- Add the chicken slices to the bowl and mix thoroughly until all of the chicken is evenly coated with the smoked paprika mixture.
- Preheat a cast iron pan or large frying pan over medium heat.
- Add the chicken slices to the pan and cook for 5 minutes.
- Stir the chicken slices with a large spoon and cook for another 3 minutes.
- Continue stirring the chicken and cooking for an additional 3 minutes at a time until the chicken is cooked through and begins to lightly brown. The chicken will take approximately 20–25 minutes to cook.
- Clean the carrots and bell peppers. Peel the carrots and cut the vegetables into strips that are a good size for dipping into the hummus.
