Tomato Salad

This simple salad is proof that salads don't need to include lettuce.

A tomato salad is a great side dish to add some brightness and acidity to a dish.

Tomato Salad

Ingredients

  • 12-16 Cherry Tomatoes
  • 1 teaspoon of Sea Salt
  • 0.5 teaspoon of Black Pepper
  • 6-8 Mint Leaves
  • 1.5 tablespoons of Extra-Virgin Olive Oil

Directions

  1. Wash the tomatoes and mint leaves.
  2. On a cutting board, cut each cherry tomato in half and then sprinkle with sea salt.
  3. On the same cutting board, layer the mint leaves on top of each other and cut into thin strips.
  4. Mix the mint leaves on top of the cherry tomatoes.
  5. In a bowl, add the tomatoes with the salt and mint. Add freshly cracked black pepper and a drizzle of olive oil.
  6. Mix to combine all the ingredients.

Tips

  • Use ripe, in-season cherry tomatoes for the best flavor.
  • The mint leaves are optional, but they do give a nice flavor and smell to the dish.
  • The sea salt helps to enhance the flavor of the cherry tomatoes.
