Tomato Salad
This simple salad is proof that salads don't need to include lettuce.
A tomato salad is a great side dish to add some brightness and acidity to a dish.
Ingredients
- 12-16 Cherry Tomatoes
- 1 teaspoon of Sea Salt
- 0.5 teaspoon of Black Pepper
- 6-8 Mint Leaves
- 1.5 tablespoons of Extra-Virgin Olive Oil
Directions
- Wash the tomatoes and mint leaves.
- On a cutting board, cut each cherry tomato in half and then sprinkle with sea salt.
- On the same cutting board, layer the mint leaves on top of each other and cut into thin strips.
- Mix the mint leaves on top of the cherry tomatoes.
- In a bowl, add the tomatoes with the salt and mint. Add freshly cracked black pepper and a drizzle of olive oil.
- Mix to combine all the ingredients.
Tips
- Use ripe, in-season cherry tomatoes for the best flavor.
- The mint leaves are optional, but they do give a nice flavor and smell to the dish.
- The sea salt helps to enhance the flavor of the cherry tomatoes.
