Chicken and Yellow Rice
Chicken and yellow rice is our family meal. Everyone loves it and we eat it every week.
The yellow rice tastes buttery and the chicken is smokey. It's a perfect combination!
Ingredients
- 2.5 pounds of Boneless, Skinless Chicken Breast
- 2 tablespoons of Extra-Virgin Olive Oil
- 1/2 teaspoon of Sea Salt
- 1 tablespoon of Smoked Paprika
- Yellow Rice
- Tomato Salad
Directions
- In a large bowl, add the olive oil, salt, and smoked paprika.
- Take the chicken out of the packaging and place on a cutting board (recommendation: keep a separate cutting board that is just for chicken).
- Slice the chicken breasts on the short side that are about 1/2 centimeter thick.
- Add all the slices of chickent to the bowl and mix thoroughly to coat all the chicken slices in the smoked paprika mixture.
- Pre-heat a cast iron pan or a large frying pan on medium heat.
- Add the chicken slices to the pan and cook for 5 minutes.
- Mix the chicken slices with a large spoon and cook for 3 more minutes.
- Continue this process of mixing the chicken slices and then cooking for an additional 3 minutes until the chicken slices begin to slightly brown (it will take about 20-25 minutes in total to cook the chicken).
- Serve the chicken over yellow rice and (optionally) a tomato salad.
Tips
- Be patient with the chicken, as it involves a lot of mixing and letting the chicken cook more.
- Slicing the chicken allows the smoked paprika to cover more chicken surface, which creates an amazing smokey flavor on the chicken.
- 1 tablespoon of smoked paprika may seem like a lot, but this recipe cooks a lot of chicken.
