Yellow rice is the most flavorful rice!

It tastes buttery and satisfying, but it's cooked with olive oil. The perfect side for Mediterranean or Mexican dishes.

Yellow Rice

Ingredients

  • 4 tablespoons of Extra Virgin Olive Oil
  • 1/2 teaspoon of Turmeric
  • 1/4 teaspoon of Ground Cumin
  • 2 teaspoons of Sea Salt
  • 2 cups of Basmati Rice
  • 3.5 cups of Cold Water

Directions

  1. In a large saucepan or Dutch oven, heat the olive oil for 3 minutes.
  2. Add the spices and stir (with a wooden spoon) into the olive oil for 30 seconds
  3. Add the rice and mix everything together. Toast the rice for 2 minutes, but not near burning the rice.
  4. Add the water and bring to a boil.
  5. As soon as the liquid is boiling, mix the rice, cover the pot, and turn the heat down to low. Cook for 15 minutes.
  6. After 15 minutes, lightly fluff the rice by mixing from the outside inwards.
  7. If the rice is still wet, cook on low heat for an additional 5 minutes.
  8. Turn the heat off and keep covered for 5-10 more minutes before serving.

Tips

  • If the rice still looks wet after the 15 minutes, keep the heat on low for an additional 5 minutes.
  • Be careful to stir the spices after adding them to the hot olive oil so the spices don't burn.
  • 2 teaspoons of salt may seem like a lot, but it makes the rice really flavorful.
