Pumpkin Snickerdoodle Cookies
Pumpkin snickerdoodle cookies taste like a cozy fall day!
These cookies are soft and chewy, with an incredible spiced flavor from the pumpkin, cinnamon, and pumpkin pie spice.
Ingredients
Cookie Dough:
- 1/2 cup of Dairy-Free Butter, Melted and Slightly Cooled (recommendation: Earth Balance - Soy Free Butter Spread)
- 1/4 cup of Light Brown Sugar
- 1/2 cup of Granulated Sugar
- 1 teaspoon of Vanilla Extract
- 6 tablespoons of Pumpkin Puree
- 1 1/2 cups of All-Purpose Flour
- 1/4 teaspoon of Salt
- 1/4 teaspoon of Baking Powder
- 1/4 teaspoon of Baking Soda
- 1 1/2 teaspoons of Ground Cinnamon
- 1 teaspoon of Pumpkin Pie Spice
Coating:
- 1/4 cup of Granulated Sugar
- 3/4 teaspoon of Ground Cinnamon
Directions
- Whisk the melted butter, brown sugar, and granulated sugar together in a medium bowl until no brown sugar lumps remain. Whisk in the vanilla extract and pumpkin puree until smooth.
- In a large bowl, whisk together the flour, salt, baking powder, baking soda, cinnamon, and pumpkin pie spice.
- Pour the wet ingredients into the dry ingredients and mix together with a spatula until combined. The dough will be very soft.
- Cover the dough and chill in the refrigerator for 30 minutes.
- Preheat the oven to 350°F.
- Remove the dough from the refrigerator.
- Prepare the coating by mixing the granulated sugar and cinnamon on a small plate.
- Scoop about 1.5 tablespoons of dough and roll it into a ball. Roll each dough ball in the cinnamon-sugar coating and temporarily place it on a baking sheet.
- After all of the dough balls have been formed and coated, roll each one in the cinnamon-sugar coating a second time. Space the cookies evenly on two baking sheets.
- . Lightly dampen your hands and gently press down on each dough ball to flatten it slightly. This helps the cookies spread and bake evenly.
- . Bake for 11–12 minutes, or until the edges appear set. The cookies will still look very soft in the center.
- . Let the cookies cool for at least 10 minutes on the baking sheets before transferring them to a wire rack to cool completely.
Tips
- Chilling the dough is a must for this recipe.
- Two baking sheets are recommended to give the cookies enough room to spread and bake evenly.
- Double coating the dough balls in cinnamon sugar gives the cookies a generous snickerdoodle coating.
