Pasta and Chicken
Pasta with chicken and green peas is a favorite dinner for our family!
Any pasta (rigatoni, penne, farfalle, spaghetti) can be combined with your favorite vegetable to make a delicious meal.
Ingredients
- 2.5 pounds of Boneless, Skinless Chicken Breast
- 2 tablespoons of Extra-Virgin Olive Oil
- 1/2 teaspoon of Sea Salt
- 1 tablespoon of Smoked Paprika
- Pasta (rigatoni, penne, farfalle, spaghetti)
- Tomato sauce (recommendation: Rao's Marina Sauce)
- Frozen Green Peas
Directions
Green Peas:
- Add the frozen peas to a medium pot and fill with enough water to just cover the bottom.
- Heat the pot (with lid on) on medium-high heat.
- Once the water starts to boil in the pot (after approximately 8 minutes), the peas are heated through.
- Using an oven glove or dish towel, carefully pour out the water from the pot into the sink by slightly opening the lid of the pot as you pour out the water.
Pasta:
- Start by filling a large pot with water (for the pasta); heat the pot (with lid) on high heat.
- Once the water is boiling, pour the pasta into the boiling water. Using a wooden spoon, mix up the pasta to prevent it from sticking to the bottom of the pot.
- Set a timer based on the recommended cooking time on the pasta packaging.
- Stir the pasta with a wooden spoon every 2-3 minutes to prevent the pasta from sticking together.
- Once the timer goes off, place a colander (i.e. pasta strainer) to your sink and pour the pasta and hot water into the colander.
- Place the empty pot back on low heat and add tomato sauce to the pot. Add in the pasta from the colander into the pot and stir with a wooden spoon to coat all the pasta in tomato sauce.
- Cook the pasta in the tomato sauce for 3-5 minutes to warm up the tomato sauce.
Chicken:
- In a large bowl, add the olive oil, salt, and smoked paprika.
- Take the chicken out of the packaging and place on a cutting board (recommendation: keep a separate cutting board that is just for chicken).
- Slice the chicken breasts on the short side that are about 1/2 centimeter thick.
- Add all the slices of chickent to the bowl and mix thoroughly to coat all the chicken slices in the smoked paprika mixture.
- Pre-heat a cast iron pan or a large frying pan on medium heat.
- Add the chicken slices to the pan and cook for 5 minutes.
- Mix the chicken slices with a large spoon and cook for 3 more minutes.
- Continue this process of mixing the chicken slices and then cooking for an additional 3 minutes until the chicken slices begin to slightly brown (it will take about 20-25 minutes in total to cook the chicken).
- On a plate or in a bowl, add the pasta, peas, and chicken together.
- Top with grated parmesan cheese, if desired.
Tips
- Be patient with the chicken, as it involves a lot of mixing and letting the chicken cook more.
- Before pouring the pasta and boiling water into the colander, turn on the faucet to cold water to cool down the boiling pasta water as it goes down the sink.
- The peas and the chicken can be added to the pasta/tomato sauce mixture to cook everything together.
- Suggested toppings: parmesan cheese (**dairy**), basil.
