Homemade granola bars are so much better than the packaged granola bars that are either too crunchy or too soft.

These granola bars can be eaten for breakfast, but they feel like eating a dessert!

Granola Bars

Ingredients

  • 2 cups of Gluten-Free Rolled Oats
  • 1/2 cup of Sliced Almonds
  • 1/2 cup of Almond Butter
  • 1/2 cup of Honey
  • 1/2 teaspoon of Sea Salt
  • 1/3 cup of Dark Chocolate Chips

Directions

  1. Line an 8-inch square baking pan with parchment paper.
  2. In a small bowl or large measuring cup, add the dry ingredients (oats, sea salt) and mix to combine.
  3. In a small saucepan over medium heat, bring the honey to a boil. As soon as bubbles start to form around the edges of the pan, set a timer for 1 minute.
  4. After the 1 minute, turn off the heat and pour in the almond butter. Mix quickly to melt the almond butter into the boiling honey.
  5. Pour the wet mixture over the oats and stir to combine (the mixture will get sticky and hard to mix).
  6. Pour the mixture into the 8-inch square baking pan and spread it out evenly.
  7. Place the pan into the freezer for 10-15 minutes to allow the granola mixture to set.
  8. Add the dark chocolate chips to a microwave-safe bowl or measuring cup, and melt in the microwave (usually takes 45-60 seconds).
  9. Pour the melted chocolate over the granola.
  10. Cut the granola mixture into 8 to 12 bars using a large knife.

Tips

  • Boiling the honey in a saucepan might seem different, but it helps to evenly coat the oats and helps to gently melt the almond butter without it become runny.
  • Make sure to have all the ingredients ready before starting to boil the honey, as the steps have to be done quickly.
