Breakfast Sandwich
A breakfast sandwich is a great combination of fluffy eggs and sausage. Plus it's on a bagel to make it even better!
Ingredients
- 1 Bagel (recommendation: Dave's Bread - Plain Awesome Bagels)
- 3 Sausage Patties (recommendation: Applegate Savory Turkey Breakfast Sausage Patties)
- 2 Eggs
- 1/2 tablespoon of Dairy-Free Butter (recommendation: Earth Balance - Soy Free Butter Spread)
- 1/2 teaspoon of Black Pepper
- Ketchup (optional)
Directions
- If desired, toast the bagel slightly (so it's not too crispy).
- Heat up the sausage patties in the microwave per the package directions (usually 90 seconds for 3 sausage patties).
- In a non-stick pan, heat up the butter on medium heat until it melts and spread the butter over the cooking surface of the pan.
- Crack the eggs into a measuring cup or small bowl and whisk thoroughly with a fork.
- Reduce the heat on the pan to low and add the eggs to the frying pan.
- Fold and mix the eggs after a minute until cooked all the way through.
- Assemble the sandwich by adding the scrambled eggs, ketchup (optional), and sausage patties to the bagel. Enjoy!
Tips
- Cook eggs on a low temperature to avoid frying them or over-cooking them. Scrambled eggs should be soft and just cooked through.
- The bagel should be soft, so don't over-toas the bagel if it's not fresh.
