Breakfast Scramble


A breakfast scramble is a mix of my favorite foods for breakfast. This recipe can be modified to use any vegetables that you have available.

I like to think of a breakfast scramble as scrambled eggs mixed in with veggies and meats that you like.

I think sauted spinach and bell peppers are great veggies to put into a breakfast scramble.

Breakfast Scramble


Cook the veggies prior to scrambling the eggs and putting the scramble together.

Top the breakfast scramble with ketchup, salsa, or hot sauce to spice it up!

List of Ingredients

  • 2 or 3 Eggs
  • Canola Oil (ideally, a spray)
  • 1/2 Teaspoon of Salt
  • 1 Teaspoon of Black Pepper
  • 1/2 of a Bell Pepper
  • 1 Cup of Spinach
  • 2 Breakfast Sausage Links

Recipe Steps

  1. Start by sauting the spinach and bell peppers in a frying pan on medium heat
  2. Once the spinach has wilted down and the bell peppers are still crunchy, remove from the pan
  3. Reduce the heat on the frying pan to low
  4. Heat the breakfast sausages according to their packaging and slice into small pieces
  5. Add a spray or spash of canola oil to the frying pan
  6. In a bowl or measuring cup, beat the eggs with a fork to incorporate the yolk and whites of the eggs
  7. Add the eggs to the frying pan and add in the salt and black pepper
  8. Using a spatula, start mixing the eggs once the eggs start to settle slightly
  9. Mix the eggs until fully cooked and then add in the veggies and breakfast sausage
  10. Top with ketchup or salsa and enjoy!
