A breakfast scramble is a mix of my favorite foods for breakfast. This recipe can be modified to use any vegetables that you have available.
I like to think of a breakfast scramble as scrambled eggs mixed in with veggies and meats that you like.
I think sauted spinach and bell peppers are great veggies to put into a breakfast scramble.
Cook the veggies prior to scrambling the eggs and putting the scramble together.
Top the breakfast scramble with ketchup, salsa, or hot sauce to spice it up!
