BBQ Steak
BBQ steak is delicious! This recipe uses skirt steak that is cooked low and slow to get a smoky flavor.
The key to this recipe is marinating the steak in lime juice before BBQing.
Ingredients
Meat:
- 3 pounds of Skirt Steak (or Flank Steak)
Marinade:
- 2 teaspoons of Sea Salt
- 2 teaspoons of Fresh Cracked Black Pepper
- 4 Tablespoons of Lime Juice
- 1/4 Cup of Extra-Virgin Olive Oil
Directions
- In a pan or large bowl, add the olive oil and lime juice to the steak.
- Add all of the dry spices to all sides of the steak.
- If marinading for over 1 hour, place in the refrigerator.
- Prepare the fire in the grill (preferably, a charcoal grill).
- On the grill is heated, place the marinaded steak pieces over indirect heat.
- Cook for 45 to 60 minutes, depending on the heat of the BBQ and how you like your steak cooked.
- Before taking the steak off the grill, sear the top and bottom over the direct fire to get some nice grill marks.
- Slice against (perpendicular) the grain of the meat and serve with your favorite side dishes (bread, French fries, etc.).
Tips
- A common grilling method with tougher cuts of meat is to do a revere-sear, where the tri-tip is cooked over indirect heat at first and then finished over the fire to mark the meat.
- This steak works perfect in tacos or quesadillas.
